One of my all-time favorite cookie recipes is my daughter’s recipe for these soft peanut butter cookies. She experimented with ingredient amounts and baking times to develop a delicious recipe for soft and chewy cookies that she prefers over crispy peanut butter cookies. These delightful treats strike the perfect balance between chewy and tender, with a delicious peanut butter flavor enhanced with peanut butter chips. Furthermore, they’re simple to make and always a crowd-pleaser, making them a go-to option for gatherings, potlucks, or simply indulging in a sweet treat at home.

Use Peanut Butter Chips for Extra Flavor
You only need a few pantry staples to whip up a batch of these irresistible cookies.
Creamy Peanut Butter: This recipe uses creamy peanut butter; however, you can substitute crunchy.
Flour: Use an all-purpose flour such as King Arthur.
Sugar: Both white and brown sugar are used in these cookies. In fact, the brown sugar adds flavor and makes the cookies moist and chewy.
Egg: Use a room-temperature egg, and the batter will mix more easily.
Butter: Use salted or unsalted butter in this recipe.
Leavening Agents: This recipe utilizes baking powder and baking soda to cause the cookies to rise.

Soft Peanut Butter Cookies

Ingredients
- 1 ¼ cups all-purpose flour
- ¾ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar (loose, not packed)
- 1 large egg, room temperature
- ½ cup peanut butter
- 1 cup peanut butter chips
Instructions
- Preheat the oven to 325 degrees F. Add a sheet of parchment paper to a baking sheet.
- Whisk the flour, baking soda, baking powder, and salt in a bowl and set aside.
- Cream the butter and sugars together with a mixer.
- Add the egg and mix until blended.
- Add the peanut butter. Mix.
- Add the dry ingredients and mix until blended.
- Stir in the peanut butter chips.
- Use a medium-sized cookie scooper to scoop the dough and place it on the prepared baking sheet. Leave room for the cookies to spread.
- Bake for 12-15 minutes or until only lightly browned. Do not overbake.
- Cool on the pan until set. If you need to reuse the baking sheet while they are cooling, slide the parchment paper to a cooling rack or countertop.
