Easy-to-make green sherbet punch is perfect for St. Patrick’s Day celebrations and can be served as a mocktail or cocktail.

- 1 46-ounce can pineapple juice
- 1 2-liter ginger ale
- 1 quart lime sherbet
- 1 1/2 ounces lime vodka or coconut rum (optional - for cocktails - modify vodka or rum amount for your taste)

Instructions
- Soften the lime sherbet by leaving it out of the freezer for about 15-20 minutes. Then in a large punch bowl, using all of the sherbet, place it in scoops in the bowl. Over this, shake and then pour the pineapple juice. Then add the ginger ale. Stir until the sherbet starts to dissolve.
- To make cocktails, add 1 to 1 1/2 ounces of vodka or rum to a 6-8 ounce serving of the sherbet punch.
Recipe Notes
Either a lime vodka or coconut rum will work in this recipe to make a cocktail.
