Cranberry Sherbet Punch

Try this easy punch for special occasions. It only takes five minutes to make and has a pretty pink color. It is ideal for holiday celebrations such as Christmas, Valentine’s Day, Easter, birthdays, patriotic celebrations, and baby showers. It is delicious in summer or winter!

Three Ingredients

It takes only three ingredients-sherbet, pineapple juice, and sparkling cranberry juice to make this punch. For the best results, refrigerate the pineapple juice and sparkling cranberry juice. Remove the sherbet from the freezer about 20 minutes ahead of time so that it has time to soften before putting it in the punch.

Use a Large Punch Bowl

It is best to mix this punch in a large punch bowl because it makes about 12 eight-ounce servings. You can also double the ingredients for a large party. To make the punch, add the softened sherbet first. It helps to use a potato masher or meat smasher to help chop the sherbet. Or, if the sherbet is very soft, you can use a fork to help break it apart. Next, add the pineapple juice and then the sparkling cranberry juice. Don’t overmix so that there are still some lumps of sherbet floating on top.

Garnishes

It is pretty if you garnish this punch with a handful of fresh cranberries. You can also use maraschino cherries, raspberries, pomegranate arils, and pineapple chunks. If you are serving it for a special occasion, it is pretty with a sprig of greenery. Add a skewer with fruit in each glass too.

Spiking this Punch

I am often asked if you can spike this punch. Yes, you can! Vodka will work well with this punch. However, if serving this punch to children and adults, it is best to spike individual glasses instead of the whole punch bowl. Use 1 or 2 parts vodka to 3 parts punch and adjust for your particular taste.

Make Taste Adjustments

This punch is very forgiving if you add a little more or less of the ingredients. Sometimes I add extra sherbet or sparkling cranberry juice with good results. Also, you can substitute cranberry juice and sparkling water if you do not have access to sparkling cranberry juice. The recipe notes give amounts for making this substitution. However, you can always add more or less of each substitution ingredient to suit your taste. Enjoy!

Instructions
  1. Remove the sherbet from the freezer and let it thaw for about 20-30 minutes to soften.
  2. Add the sherbet to a large punch bowl. Use a potato masher or fork to coarsely mash the sherbet to mix it better with the other liquids. Leave some small chunks of sherbet to float in the punch.
  3. Pour in the pineapple juice and then the cranberry juice. Stir. If using alcohol, add it at this point. See note below.
  4. Add a handful of fresh cranberries to the punch for garnish. Place cranberries and maraschino cherries on skewers and add to each glass for garnish. Add a sprig of edible greenery to each glass.
  5. Serve immediately.

This recipe makes about (12) 8-ounce cups or (12) 237-ml servings.

Ingredients

This punch is very forgiving if you add a little more or less of the listed ingredients. For a less sweet option, make this substitution: Use Simply Cranberry Cocktail and sparkling water in place of the Sparkling Cranberry Juice. Add less cranberry cocktail and more sparkling water to suit the sweetness taste you want.

Sources

There are many brands of sparkling cranberry juice you can use for this recipe. If unable to find sparkling cranberry juice, you can substitute cranberry juice and sparkling water in its place. Use 15 ounces of cranberry juice and 10 ounces of sparkling water. You can tweak these amounts based on desired taste. I recommend the Simply Cranberry Cocktail juice brand.

Spiking

You can spike this punch with cranberry vodka or other alcohol if you choose.  Start with 1/2 cup and add extra for desired taste.  Also, to accommodate nonalcoholic drinkers, consider spiking each individual glass instead of the whole punch bowl.
