Festive Fruit
One of the easiest fruits to cut into shapes is watermelon. To make these fruit skewers, I used small star-shaped cookie cutters. I cut out stars from watermelon slices that were 1/2 to 1 inch thick to give plenty of room for the skewer. If the watermelon is too thin the skewer will break the stars.
For the white fruit in this patriotic trio, I used apples, but you could also use bananas. Apples are not as easy to cut as watermelon but work well on a skewer for the white color needed. They also hold their shape better than bananas. The stars also need to be cut from thick slices of apples. Also, be careful when you stick the skewer in the apple stars because they are easier to break than watermelon. To keep the white color from turning brown, use lemon juice and coat the apple stars well.
Blueberries make up the blue color of the trio and they are very easy to work with. Just finish filling the skewer with blueberries after adding the watermelon and apples. The number of blueberries used for each skewer can vary based on the size of the blueberries. When you finish the skewers, store them in the refrigerator until you are ready to serve them. For the best taste, serve the skewers the same day you make them. Enjoy!

- (20) 6-inch wooden skewers (see note below)
- 2 large apples
- 60-80 Blueberries
- 1 mini star cookie cutter (about 1 inch)
- 1 small star cookie cutter (about 1 1/2 inch)
- 1/4-1/3 cup lemon juice

- Pour the lemon juice into a small bowl.
- Peel an apple and cut it vertically into 3/8-inch-thick slices. The slices need to be thick enough to stick a skewer through without breaking them. Using the small cookie cutter, cut out 20 stars and put them into the bowl of lemon juice, coating them on both sides.
- Starting in the middle of the watermelon, cut it vertically. From one-half of the watermelon, start by cutting two large round slices about 1-inch thick. Try to cut the slices very even so the stars are all the same size. Using the small cookie cutter, cut out 20 stars.
- Then use the mini cookie cutter to cut out 20 small stars. Slice additional watermelon slices if needed.
- Wash and dry the blueberries. Then add the fruit to the skewers in the following order: large watermelon star, small watermelon star, apple star, and 3-4 blueberries. Repeat for all the skewers.
If you have trouble finding 6-inch wooden skewers, use longer ones and break them into the smaller size.
