Tips for Making Charming and Easy Cupcakes

Do Not Over-Stir

When making cupcakes, there are a few tips to keep in mind. First, follow the recipe exactly as written. Be sure not to over-stir the batter. I used to ignore the word “sift” in recipes thinking I could just beat the lumps out with a mixer. But once I learned how important it is not to over-stir the batter, I started sifting all my dry ingredients. Yes, it is an extra step, but it means the batter is hand-stirred, and there is no need for a mixer!

Do Not Overcook

The last tip for making great cupcakes is don’t overcook them. Cook them until they are light brown and no more, and they will be tender and delicious! There are two tests to help determine when they are done. One, gently press the center of a cupcake–if the center springs back into place when you remove your finger, the cupcake is done.

The other way to determine when a cupcake is done is to stick a toothpick into the center of it. Then remove it, and check for cake batter on it. When the cupcake is done, the withdrawn toothpick will be clean or only have a few crumbs. Ovens can vary in temperature, so check the cupcakes before the timer goes off just in case your oven bakes a little hotter.

Tips for Using Frosting

You will need three piping bags, two star tips, and a small round tip to make the frosting for these cupcakes. If you don’t have piping bags, use resealable plastic bags instead. Also, use large gallon bags if you need to pipe a lot of frosting and smaller sandwich bags for piping smaller amounts.

Use a Tall Cup to Hold the Bag

To fill the piping bag with frosting, use a large cup to hold the bag. Then place the bag inside the cup and push it down to make it fit and smooth any folds. This will make it easier to fold the bag edges over the cup rim, which makes a good opening for the frosting. Additionally, this tall-cup method will help prevent the bag from closing as you insert the frosting with a spatula.

Cool the Cupcakes

Always make sure the cupcakes are cool before you attempt to frost them because hot cupcakes can melt the frosting.

Coloring the Frosting for Charming and Easy Cupcakes

The main thing to remember when you color the frosting is to keep the orange and pink shades similar in intensity. If you like a pastel look, use less gel coloring. For darker colors, use more. Just make sure one color isn’t a lot darker than the other. I used Wilton Pink gel coloring, Sunny Side Up Bakery Squeeze Gel Neon Orange, and Wilton Leaf Green gel coloring. But feel free to use whatever pink, orange, and green colors you already have on hand. 

Start with Orange Frosting

Start with the orange frosting and a star tip. Pipe a circle in the middle of the cupcake, making it pumpkin-shaped if you are artistic. If not, a circle shape works fine because the pumpkins don’t have to be perfect to look cute and delicious! Hold the bag and tip straight up (perpendicular) over the cupcake to ensure that the stars have the same shape.

Then fill in the circle with stars using the same piping technique.

Pipe pink stars around the orange pumpkin shape to cover the outer edge of the cupcake. Then pipe green stems with the round tip. Start drawing the stem on the top of the orange pumpkin, and wiggle the piping tip to give it a pleasing shape. Then repeat the process with half the cupcakes until you have 12 orange pumpkins.

Then frost the other 12 cupcakes with pink pumpkins and add orange stars to the outer edge.

Garnish Charming and Easy Cupcakes with Sprinkles (optional)

If you want to dress up your cupcakes, you might add pink or orange sprinkles to enhance the pumpkins or put green sugar on the stem. Or you can enjoy these cute pumpkin cupcakes without any additional decorations. They are easy to make and charming in these bright pink and orange colors. Enjoy!

  1. Preheat oven to 325 degrees Fahrenheit.
  2. In a large mixing bowl, whisk together the sour cream, buttermilk, vanilla, eggs, and vegetable oil until smooth. Then sift in the cake mix and stir until the batter is mixed. (Be careful not to overmix.) Do not skip sifting the cake mix because the batter will be lumpy.
  3. Using a cookie scoop, place the cake batter in the cupcake liners.
  4. Bake for 23 minutes or until cupcakes are lightly browned and a toothpick inserted into the middle of a cupcake comes out clean or with crumbs. Do not overbake. After 5 minutes, move the cupcakes to a cooling rack.
  1. Beat the butter, vanilla, and salt with an electric mixer until creamy. Add the cream and stir. Add the powdered sugar a cup at a time and beat between each addition. If the frosting is too stiff, add more cream. If too soft, add more sugar.
  2. Place a small amount of frosting in a small bowl. Add a drop of green gel coloring and stir to mix. Add extra color if needed until the desired color is reached.
  3. Divide the rest of the frosting between 2 bowls. Add pink gel coloring to 1 bowl and orange to the other. Stir. Add additional coloring if needed until the desired color is reached.
  4. Set up three piping bags. Place a star tip in 2 of the bags and the round piping tip in the third bag. Place the orange and pink frostings in bags with star tips. And put the green frosting in the bag with the round tip.
  5. Pipe orange stars in a round circle in the middle of a cupcake. Then fill in the center with orange stars. Next, fill in with pink ones around the orange circle. Make a stem with green frosting. Wiggle the tip to make a pleasing stem shape. Pipe the rest of the cupcakes--12 with orange pumpkins and 12 with pink.
