This is one of the easiest appetizers you can make. If you like cheese, then you won’t be disappointed because these bacon cheese cups are basically made out of cheese — cream cheese, cheddar cheese, and sour cream.
They are topped with bacon and more cheese for garnish. It’s a perfect bite that is not too much and always leaves you wanting more!
All this cheese and bacon sit in little phyllo cups that are prebaked. All you do is fill them, heat, and then eat! I used Athens brand phyllo shells. The 1.9 ounces (54 grams) box contains 15 shells. You will need 30 shells for this recipe.
Simple and delicious, this is the perfect appetizer because these cups won’t spoil your appetite. Well, unless you make a meal of them, that is!
Softening Cream Cheese
One tip for quickly putting together this recipe is to soften the cream cheese by bringing it to room temperature before starting by leaving it out of the refrigerator for about an hour.
If you are short on time, you can unwrap cream cheese and cut it into pieces and place the pieces, separated, on a plate. This method will take about 20 minutes.
The quickest method for softening cream cheese is to unwrap it, cut it into chunks, and place it on a microwaveable plate. Use a low microwave power setting and short cooking time to soften the cream cheese. Heat it for about 10 seconds and then check it. Repeat until it is softened but not hot. With this method, you have to be very careful not to overheat or cook the cream cheese.

- 4 ounces cream cheese, room temperature
- 1 cup sour cream
- 1 cup cheddar cheese, finely shredded (plus more for garnish)
- 4 green onions, minced (plus 1 more for garnish)
- 30 phyllo shells (Athens brand used with 15 shells per box)
- 8 slices bacon, finely chopped

- Preheat the oven to 400 degrees Fahrenheit.
- In a mixing bowl, combine the cream cheese, sour cream, cheddar cheese, and green onions. Using a whisk, mix well until the cream cheese is creamy.
- Place the phyllo cups on a baking sheet and fill with the cheese mixture. Bake for 10 minutes. Remove from the oven and sprinkle the bacon over the cups. Garnish with a little cheddar cheese and green onion. Serve immediately.
You can quickly chop bacon very fine by putting it in a food chopper.
