Easy and Delicious Grapefruit Vinaigrette Dressing
This vinaigrette dressing uses grapefruit juice and a three-citrus marmalade to give it a lively taste. This easy-to-make dressing can be prepared a day or two ahead and stored in the refrigerator. Just set it out 30 minutes to an hour ahead of the time you plan to use it.
Use Grapefruit Juice
I use freshly-squeezed grapefruit juice or Simply Grapefruit juice brand to make this salad dressing. The advantage of squeezing juice from a fresh grapefruit is that you don’t have a bottle of juice left over if you don’t like to drink it. However, having a bottle of grapefruit juice on hand will let you make a fresh batch of this salad dressing as often as you want.
Use a Citrus Marmalade for Grapefruit Vinaigrette Dressing
Use a three-citrus marmalade in this salad dressing. It is made from lemons, oranges, and grapefruits. However, you can also use grapefruit marmalade in its place if you choose, and the taste will be very similar. I recommend a three-citrus marmalade because it is easier to find than a grapefruit marmalade. Stonewall KitchenΒ also has a delicious pink grapefruit marmalade that works well.

- 1/4 cup olive oil
- 1/4 cup grapefruit juice
- 3 tablespoons white wine vinegar
- 3 tablespoons three-citrus marmalade (or pink grapefruit marmalade)

- Place all the ingredients in a wide mouth jar and blend with an immersion blender for about 20-30 seconds or until the marmalade is completely blended. You can also use a blender or food chopper to mix the ingredients.
- Serve immediately. Store leftovers in the refrigerator.
