Pineapple vinaigrette, made with fresh or canned pineapple juice is easy and quick. Just place all ingredients in a jar, cover, shake, and serve. This recipe originally had a subtle pineapple taste, but I have updated it by adding a pineapple ice cream topping to enhance the pineapple taste. I hope you like this new version!

Ingredients
- 1/4 cup olive oil
- 1/4 cup pineapple juice (fresh or canned)
- 3 tablespoons red wine vinegar
- 3 tablespoons pineapple ice cream topping (or pineapple preserves)
- 1/8 teaspoon salt
- 1 pinch black pepper
- Jar with lid

Instructions
- Place all ingredients in a jar with a lid.
- Cover the jar and shake vigorously until all the ingredients are blended. Serve immediately. Shake the jar each time before serving. You can also use an immersion blender for faster and more thorough blending.
