Easy and quick to make, pineapple salsa can be made ahead of time and kept in the refrigerator. Timesaver tip: If you don’t have time to cut up a fresh pineapple, look for precut fresh pineapple in the produce section of the grocery store.

Ingredients
- 1 cup fresh pineapple, chopped
- 3 tablespoons red onion, finely chopped
- 2 tablespoons cilantro, chopped
- 1/2 Jalapeno pepper, finely chopped (optional)
- 1 tablespoon rice vinegar
- 1/8 teaspoon Ground red pepper
- Salt to taste
- Black pepper to taste

Instructions
- Cut and chop all vegetables. Place all ingredients in a bowl and stir.
- Let sit at room temperature for 20-30 minutes until flavors blend. Refrigerate leftover salsa.
