Maple-Sriracha Pineapple Bacon Bites

Pineapple bites are so easy to prepare and are so delicious! This recipe uses fresh pineapple pieces that are wrapped in a half slice of bacon and then baked. At the halfway cooking point, they are removed from the oven and brushed with a spicy maple sriracha sauce and then returned to the oven to finish cooking until the bacon is crispy.

When wrapping the bacon around the pineapple, make sure the ends of the bacon are tucked under the pineapple so it stays in place while cooking.

The bites cook for half the cooking time before you brush on the sauce. This keeps the sauce from burning in the hot oven, yet it still cooks long enough to caramelize.

Instructions
  1. Mix together the sriracha hot sauce and maple syrup. Set aside.
  2. Place a sheet of parchment paper on a baking sheet. Preheat oven to 400 degrees Fahrenheit.
  3. Cut up a fresh pineapple into small cubes about 1 x 1 inch. For this recipe, cut up 28 cubes. Wrap 1/2 piece of bacon around each pineapple cube. Place the bacon-wrapped pineapple cubes on the baking sheet, making sure that each piece is not touching another one.
  4. Bake for 15 minutes. Remove from the oven and brush on the maple sriracha sauce. Return to the oven for 15 more minutes or until the bacon is crispy. Remove from the oven and serve warm.
Recipe Notes

For a less spicy sauce, use a brown-sugar based BBQ sauce in place of the maple-sriracha sauce. Brush on the sauce after the first 15 minutes of baking time and then return the pineapple bites to the oven to finish baking.

Using a baking pan with a metalย grid lets the juice from the pineapple and the maple syrup drip off the bites, which helps keep the bites from excessive browning on the bottoms.
