Instructions
Mix together the sriracha hot sauce and maple syrup. Set aside.
Place a sheet of parchment paper on a baking sheet. Preheat oven to 400°F.
Cut up a fresh pineapple into small cubes about 1 x 1 inch. For this recipe, cut up 28 cubes. Wrap 1/2 piece of bacon around each pineapple cube. Place the bacon-wrapped pineapple cubes on the baking sheet, making sure each piece is not touching another one.
Bake for 15 minutes. Remove from the oven and brush on the maple sriracha sauce. Return to the oven for 15 more minutes or until the bacon is crispy. Remove from the oven and serve warm.
Notes
Substitute
For a less spicy sauce, use a brown-sugar-based BBQ sauce in place of the maple-sriracha sauce. Brush the pineapple bites with the sauce after the first 15 minutes of baking, then return them to the oven to finish baking.
Baking Pan with Grid
Using a baking pan with a metal grid lets the pineapple juice and maple syrup drip off the bites, helping prevent excessive browning on the bottoms.
