This is a vintage recipe for a baked pineapple casserole. This side dish goes well with ham but easily pairs with any savory main dish because it is sweet like a dessert – in fact, it works well as a dessert too! It is very easy to make because you add most of the ingredients to one bowl and just stir.
A sleeve of Ritz crackers makes the topping for this casserole. I always crush them in the packaging by starting at one end and squeezing the end crackers first. Squeeze gently so you don’t burst the packaging. Open one end of the crackers and sprinkle the crumbs evenly on top of the pineapple mixture. Then just drizzle melted butter on top of the crackers and pop the baking dish in the oven. It is really that easy!
Most vintage pineapple casserole recipes have a lot of sugar in them so I reduced the amount of sugar in this recipe and the dish still tastes sweet. I also reduced the amount of butter with good results. Since the crackers have a buttery taste the reduction didn’t affect the taste at all!
I usually serve this dish during holidays but it a great dish to serve anytime. It is quick, easy, and delicious!

- 1 20-ounce can pineapple tidbits, drained (packed in juice)
- 1 20-ounce can crushed pineapple (packed in juice)
- 1/4 cup all-purpose flour
- 3/4 cup granulated sugar
- 2 cups cheddar cheese, shredded
- 1 sleeve Ritz Crackers, crushed (approximately 30-35 crackers)
- 1/4 cup butter, melted
- cooking spray
- 1 10-inch baking dish (or equivalent)

- Preheat the oven to 350 degrees F. Spray the baking dish with cooking spray.
- In a large mixing bowl, stir together the pineapple, flour, sugar, and cheese and pour into the prepared baking dish.
- Sprinkle the crushed crackers over the pineapple mixture.
- Drizzle the butter over the crackers.
- Bake for 30 minutes.
Ritz crackers crush easily in their unopened sleeve. Starting slowly, carefully squeeze the sleeve on one end to start. Work your way to the other end of the sleeve, squeezing until all the crackers are crushed. Don't squeeze too aggressively, or you might pop the sleeve and send crackers flying into the air!
