Equipment

  • 10-inch baking dish or equivalent

Ingredients

  • (1) 20-ounce can pineapple tidbits, drained (packed in juice)
  • (1) 20-ounce can crushed pineapple (packed in juice)
  • ¼ cup all-purpose flour
  • ¾ cup granulated sugar
  • 2 cups cheddar cheese, shredded
  • 1 sleeve Ritz Crackers, crushed (approximately 30-35 crackers)
  • ¼ cup butter, melted
  • cooking spray

Instructions

  • Preheat the oven to 350°F. Spray the baking dish with cooking spray.
  • In a large mixing bowl, stir together the pineapple, flour, sugar, and cheese. Then, pour the mixture into the prepared baking dish.
  • Sprinkle the crushed crackers over the pineapple mixture.
  • Drizzle the butter over the crackers.
  • Bake for 30 minutes.

Notes

Cracker Topping

Ritz crackers crush easily in their unopened sleeve. Starting slowly, carefully squeeze the sleeve on one end to start. Work your way to the other end of the sleeve, squeezing until all the crackers are crushed. Don't squeeze too aggressively, or you might break the sleeve and send crackers flying into the air!
