Equipment

  • immersion blender (or a jar with lid for shaking the vinaigrette to mix it)

Ingredients
  

  • ¼ cup olive oil
  • ¼ cup grapefruit juice
  • 3 tablespoons white wine vinegar
  • 3 tablespoons three-citrus marmalade (or pink grapefruit marmalade)
  • teaspoon salt
  • 1 pinch black pepper

Instructions
 

  • Place all the ingredients in a wide mouth jar and blend with an immersion blender for about 20-30 seconds or until the marmalade is completely blended. You can also use a blender or food chopper to mix the ingredients.
  • Serve immediately. Store leftovers in the refrigerator.

Marmalade

Serving Vinaigrette

Let a chilled vinaigrette come to room temperature before serving so the olive oil isn't a solid. Then re-blend before serving.
