  • 28 toothpicks or small skewers
  • parchment paper

Ingredients
  

  • 28 chunks of fresh pineapple
  • 14 slices of bacon, each cut in half
  • 3 tablespoons maple syrup
  • 3 tablespoons sriracha hot sauce (See note below for a less spicy option)

Instructions
 

  • Mix together the sriracha hot sauce and maple syrup. Set aside.
  • Place a sheet of parchment paper on a baking sheet. Preheat oven to 400°F.
  • Cut up a fresh pineapple into small cubes about 1 x 1 inch. For this recipe, cut up 28 cubes. Wrap 1/2 piece of bacon around each pineapple cube. Place the bacon-wrapped pineapple cubes on the baking sheet, making sure each piece is not touching another one.
  • Bake for 15 minutes. Remove from the oven and brush on the maple sriracha sauce. Return to the oven for 15 more minutes or until the bacon is crispy. Remove from the oven and serve warm.
