- 3 tablespoons olive oil
- ¾ cup sweet onions, diced
- ½ cup red bell pepper, diced
- 3 cloves garlic, minced
- 3 cups cooked jasmine rice, 1 day old
- 1 teaspoon chili-garlic sauce (Huy Fong used)
- 2 teaspoons lime zest
- 1 cup fresh pineapple, diced into small pieces
- ½ cup + 3 tablespoons fresh cilantro, roughly chopped (loosely pack cilantro in measuring cup)
- salt to taste
Instructions
- Add the olive oil to a large skillet on medium-high heat. Add the onions and bell pepper and saute until they are wilted. Add the garlic during the last 30 seconds of cooking.
- Add the rice, chili-garlic sauce, and lime zest. Keep the pan hot and mix well. Add more olive oil, if needed, to separate any rice clumps, stirring constantly.
- Add the pineapple and 3 tablespoons of cilantro; stir. Cook for 3-5 minutes, or until the rice is hot. Stir in the remaining cilantro and season with salt to taste. Serve immediately.
