Ingredients
  

  • 3 tablespoons olive oil
  • ¾ cup sweet onions, diced
  • ½ cup red bell pepper, diced
  • 3 cloves garlic, minced
  • 3 cups cooked jasmine rice, 1 day old
  • 1 teaspoon chili-garlic sauce (Huy Fong used)
  • 2 teaspoons lime zest
  • 1 cup fresh pineapple, diced into small pieces
  • ½ cup + 3 tablespoons fresh cilantro, roughly chopped (loosely pack cilantro in measuring cup)
  • salt to taste

Instructions
 

  • Add the olive oil to a large skillet on medium-high heat. Add the onions and bell pepper and saute until they are wilted. Add the garlic during the last 30 seconds of cooking.
  • Add the rice, chili-garlic sauce, and lime zest. Keep the pan hot and mix well. Add more olive oil, if needed, to separate any rice clumps, stirring constantly.
  • Add the pineapple and 3 tablespoons of cilantro; stir. Cook for 3-5 minutes, or until the rice is hot. Stir in the remaining cilantro and season with salt to taste. Serve immediately.

Notes

Rice

This recipe works best with day-old rice.
When preparing the rice for this recipe, rinse it to remove starch, which can make fried rice mushy.

Substitution

Feel free to substitute basmati rice for jasmine.
