Instructions
Add the olive oil to a large skillet on medium-high heat. Add the onions and bell pepper and saute until they are wilted. Add the garlic during the last 30 seconds of cooking.
Add the rice, chili-garlic sauce, and lime zest. Keep the pan hot and mix well. Add more olive oil, if needed, to separate any rice clumps, stirring constantly.
Add the pineapple and 3 tablespoons of cilantro; stir. Cook for 3-5 minutes, or until the rice is hot. Stir in the remaining cilantro and season with salt to taste. Serve immediately.

This recipe works best with day-old rice.When preparing the rice for this recipe, rinse it to remove starch, which can make fried rice mushy.
