Indulge in a Delightful No-Bake Lemon Berry Pie
This is an easy pie to make and is pretty for Valentine’s Day or anytime you want an easy, delicious dessert. It features a chocolate cookie crust made with Oreos (dark chocolate sandwich cookies) and a lemon filling composed of cream cheese and sweetened condensed milk. Additionally, you can substitute other fruit for the strawberries, such as raspberries, blackberries, or blueberries.

Use a Premade Crust for No-Bake Strawberry Lemon Pie
This recipe uses a pre-made chocolate cookie crust to save time. However, you can use a homemade crust if you prefer. You can find a recipe for a homemade crust by clicking here. The homemade crust has only two ingredients and is easy to make if you don’t have a ready-made crust. If you make a homemade crust, you could substitute Lemon Oreos instead of chocolate for a citrusy variation.Â
Make the Filling
You will need a mixer to smooth out any lumps of cream cheese in the filling. Once you’ve done that, mix all the filling ingredients and then set the filling aside while you cut the strawberries into hearts.

Cut Strawberries into Hearts
Since strawberries naturally resemble hearts, it is easy to cut them for this pie. First, wash and dry the strawberries ahead of time, so they can dry thoroughly. Then sort the strawberries by size. This makes it easier to place them on the finished pie.

Then, remove the strawberry greenery by pulling it off. Try not to cut it to help the berry retain its natural strawberry shape.

Next, use a sharp knife to cut out a V shape on the top of the strawberry (as shown below). This will remove the stem from the greenery.

Once the V shape is cut into the strawberry, stand it on its pointed end. Then, use the knife to slice the strawberry in half, making two heart shapes.

Finally, repeat the process of cutting the strawberries until you have enough to cover the top of the finished pie.

Arrange the Strawberries for No-Bake Strawberry Lemon Pie
Begin by arranging the strawberries in a pleasing design, as shown in the photo below. I started by placing four large berries in the center of the pie, ensuring that their four bottom points converged at a central point. Next, I positioned strawberries around the perimeter of the pie, with each berry’s bottom pointing toward the center. Continue placing the strawberries in this way until all the berries are on top of the pie. Additionally, fill in any gaps with extra berries. Remember, the strawberries don’t have to be perfect; just aim for a pleasing arrangement. Enjoy!

No-Bake Strawberry Lemon Pie
Ingredients
- 8 ounces cream cheese, room temperature
- (1) 14-ounce can sweetened condensed milk
- ½ teaspoon vanilla
- 1 pinch salt
- ½ cup fresh lemon juice
- chocolate crumb crust (see note below for gluten-free crust)
- 1 pound strawberries, washed and dried
Instructions
- Beat the cream cheese with a mixer to break up any lumps.
- Add the sweetened condensed milk, vanilla, and salt. Beat for 2-3 minutes on medium speed until creamy.
- Add the lemon juice and beat until well mixed.
- Pour the crust into the ready-made crust.
- Remove the caps from the strawberries. Use a sharp knife to cut a V shape out of the top of the strawberries. Then stand the strawberries on their ends and cut them in half lengthwise. This will make a heart shape.
- Place the strawberry hearts around the perimeter of the pie. Then place another ring of strawberries inside the first ring of strawberries. Continue until the pie top is filled with heart-shaped strawberries.
- Chill for 4 hours to overnight. Serve chilled.
