Ingredients
Creamy Jalapeno Dip
- ½ cup sour cream
- ½ cup mayonnaise
- 2 tablespoons dry ranch dressing mix (used Hidden Valley Original Ranch Salad Dressing & Seasoning Mix)
- ¼ cup pickled jalapeno peppers (used Mezzetta tamed jalapeno peppers)
- 2 tablespoons salsa verde (used Herdez mild salsa verde)
- ¼ cup fresh cilantro
Chicken Wraps
- (4) 8-inch flour tortillas
- 2 teaspoons olive oil
- 2 cups rotisserie chicken, shredded
- ½ cup red onion, minced
- ½ cup red bell pepper, chopped
- ½ cup tomato, chopped
- 4 slices cooked bacon, chopped
- ¼ cup pecans, chopped
- ½ cup Mexican blend cheese, shredded
- ½ cup tortilla chips, broken
- ¼ cup fresh cilantro, chopped
- ½ cup salsa
Instructions
Creamy Jalapeno Dip
- Add all ingredients to a food processor and blend on high until finely chopped and the dip is smooth. Keep refrigerated until ready to use.
Chicken Wraps
- In a large skillet, place 1/2 teaspoon of olive oil and stir to coat the pan.
- Add a tortilla to the pan. Spread out a handful of chicken on half of the tortilla. Then add the following on top of the chicken on half of the tortilla: onion, bell pepper, tomato, bacon, pecans, cheese, tortilla chips, and cilantro. Then drizzle 2-3 tablespoons of the Creamy Jalapeno Dip over the other ingredients.
- Fold the tortilla over and heat on medium-low heat until the quesadilla is lightly browned. Turn over the quesadilla and toast the other side. Top with salsa and serve immediately.
