A Seedy Little Popsicle

How to Assemble a Seedy Little Popsicle

To assemble, cut the kiwis into thin, round slices. Use a small melon scoop to make dragon fruit balls, or cut it into small cubes. Alternate adding pieces of fruit to a popsicle mold. Fill it about two-thirds full. Add the white grape juice, leaving about a half inch at the top for the mixture to expand as it freezes.

Adding the Sticks

Add the lid with a popsicle stick to the top of the mold and press to close. If you do not have one or want to use old-fashioned wooden popsicle sticks, place the molds upright in the freeze. Let them freeze for about 30 minutes or until slushy and thickened. Place a piece of plastic wrap over the top of the mold and fold it down to adhere it to the sides of the mold. Take a sharp knife and punch a hole in the center of the plastic wrap. Insert the wooden popsicle stick, leaving enough of it outside the plastic so you have a handle to hold it for eating.

Equipment

  • 6 popsicle molds with sticks

Ingredients
  

  • 2 medium-sized kiwis
  • 1 dragon fruit (white or pink flesh)
  • 1-2 cups white grape juice

Instructions
 

  • Peel and slice the kiwis. Cut the dragon fruit in two, and with a mini melon baller, scoop the fruit into little balls.
  • Place the fruit into the 6 molds. Fill with white grape juice. Add lids with sticks.
  • Freeze overnight or for several hours. Enjoy!

Notes

Substitutions

For less sweet fruit pops, use coconut water to bind the fruit. Substitute sparkling grape juice for the regular juice.
