The Best Coconut-Lime Sorbet

As temperatures rise and the sun beats down, there’s nothing like a refreshing, frozen dessert to cool you down. This creamy, tangy coconut-lime sorbet is one of my favorite treats for beating the summer heat. This simple and elegant dessert is the perfect balance of sweet and tart, making it a delightful palate cleanser or a stand-alone indulgence. What I love most about lime sorbet is its bright and zesty flavor. Made with freshly squeezed lime juice, sugar, and coconut milk, it embodies the essence of summer in a delicious frozen form.

Use Canned Coconut Milk for Coconut-Lime Sorbet

This sorbet differs from ice cream because it contains no dairy. Instead, it relies on canned coconut milk for its creaminess. Be sure to use canned coconut milk instead of coconut milk in a carton intended for drinking because the sorbet needs the fat from the canned version.

How Much Coconut Fat for Coconut-Lime Sorbet?

Canned coconut milk does not seem to have a standard for how much fat is included in each brand. Some brands will have high-fat content, while others will be much lower. It all depends on how it is processed. You can use either high or lower coconut fat in this recipe. However, the higher the fat, the creamier the texture. I have used brands with as little as 9% fat and as much as 20% fat.

Note that canned coconut milk with a fat content between 20-50% is coconut cream and will be labeled as such. Coconut milk will have a total fat content between 5 and 20% (but will sometimes be called coconut cream). This recipe uses coconut milk. Be aware that the lower the fat content, the more additives there may be in the coconut milk to compensate for the fat loss. Finally, only use unsweetened coconut milk in this recipe.

Ingredients
  

  • 3 cups (24 ounces) unsweetened coconut milk (full fat) (use canned coconut milk instead of from a carton)
  • 1 cup granulated sugar
  • teaspoon fine kosher salt
  • 1 tablespoon lime zest
  • ½ cup fresh lime juice

Instructions
 

  • Chill the ice cream canister.
  • Mix all the ingredients together. Stir until the sugar dissolves.
  • Add the mixture to an ice cream maker canister and churn according to the manufacturer's instructions.

Notes

Coconut Milk

This sorbet is best with full-fat coconut milk. Be sure to use canned coconut milk instead of coconut milk from a carton.

Alternative Method to Dissolve the Sugar

You can heat the sorbet mixture to dissolve the sugar. Place the coconut milk, sugar, and salt into a medium-sized saucepan. Heat the mixture over medium-low heat until the sugar dissolves. Remove from the heat and stir in the lime zest and juice. Pour the mixture into a medium-sized bowl and sit it over an ice bath to cool. Then, place it into a chilled ice cream canister and churn according to the manufacturer’s instructions.
