- 3 cups (24 ounces) unsweetened coconut milk (full fat) (use canned coconut milk instead of from a carton)
- 1 cup granulated sugar
- ⅛ teaspoon fine kosher salt
- 1 tablespoon lime zest
- ½ cup fresh lime juice
Chill the ice cream canister.
Mix all the ingredients together. Stir until the sugar dissolves.
Add the mixture to an ice cream maker canister and churn according to the manufacturer's instructions.
Coconut Milk
This sorbet is best with full-fat coconut milk. Be sure to use canned coconut milk instead of coconut milk from a carton.
Alternative Method to Dissolve the Sugar
You can heat the sorbet mixture to dissolve the sugar. Place the coconut milk, sugar, and salt into a medium-sized saucepan. Heat the mixture over medium-low heat until the sugar dissolves. Remove from the heat and stir in the lime zest and juice. Pour the mixture into a medium-sized bowl and sit it over an ice bath to cool. Then, place it into a chilled ice cream canister and churn according to the manufacturer's instructions.
