This is an easy pie to make and is pretty for Valentine’s Day, or anytime you want an easy, delicious dessert. It has a chocolate cookie crust made from Oreos (dark chocolate sandwich cookies). The pie has a lemon filling made from cream cheese and sweetened condensed milk. There is no baking for this recipe, and the finished pie is served cold. You can substitute other fruit such as raspberries for the strawberries if you choose and still have the pretty red color for festive occasions.
Use a Premade Crust
This recipe uses a pre-made chocolate cookie crust to save time. However, you can use a homemade crust for this recipe if you choose. You can find a recipe for a homemade crust by clicking here. The homemade crust has only two ingredients and is easy to make if you don’t have the ready-made crust. If you opt to make a homemade crust, you could use Lemon Oreos instead of chocolate for a citrusy variation.
Make the Filling
You will need a mixer to make the filling to remove any cream cheese lumps. It helps to let the cream cheese reach room temperature before use so that it creams easily. Mix all filling ingredients and then set the filling aside while you cut the strawberries into hearts.
Cut Strawberries into Hearts
Since strawberries naturally resemble hearts, it is easy to cut them for this pie. First, wash and dry the strawberries. I usually do this ahead of time, so they can dry thoroughly. Then sort the strawberries by size. This makes it easier to place them on the finished pie.
Remove the strawberry greenery by pulling it off. I try not to cut it so it retains its natural strawberry shape.
Use a sharp knife to cut out a V shape on the top of the strawberry (as shown below). This will get rid of the stem leftover from the greenery.
Once the V shape is cut into the strawberry, stand it on its pointed end. Use the knife to slice the strawberry in half, making two heart shapes.
Repeat cutting the strawberries until you have enough to cover the top of the finished pie.
Place the strawberries into a pleasing arrangement, as shown in the photo below. I started by placing 4 large berries in the center of the pie, pointing the four bottom points into a center point. Then I positioned strawberries around the perimeter of the pie, pointing each berry’s bottom to the center of the pie. Continue placing strawberries in this way until all the berries are placed on the top of the pie. Fill in any holes with berries. The strawberries don’t have to be perfect, just placed in a pleasing arrangement. Enjoy!
