Traditional sausage balls can be updated with lots of different flavors. This recipe for pimento cheese sausage balls is a way to enjoy the taste of the traditional recipe but with a spicy kick. I make these appetizers with jalapeno pimento cheese. Sometimes I pair the bold pimento cheese with spicy hot sausage for an extra kick. But if you are not a fan of spicy foods, use regular ground sausage and pimento cheese without peppers. The taste will still be delicious!
Use a Cookie-Making Scoop
It is easiest and quickest to mix this recipe by hand. Once the sausage mix is ready to bake, scoop it with a cookie scooper and place it on a pan. Spray the scoop with cooking spray so the sausage balls will release onto the pan easier.
Space out the sausage balls on the pan to keep them from being too close to properly cook.
Serve Warm or at Room Temperature
Bake these sausage balls for 20 minutes or until golden brown (or 145 degrees F in the center). Serve them right out of the oven or at room temperature. Store them in the refrigerator. If you want to reheat them, place them in aluminum foil and heat them at 300 degrees F for 15 minutes. Check them after this time and then heat for additional minutes if needed.

To vary this recipe, try using other flavors of pimento cheese such as bacon, sharp cheddar, garlic parmesan, and goat cheese. Enjoy!

- 1 pound ground pork sausage (mild or hot)
- 2 1/2 cups baking mix (Bisquick used in this recipe)
- 1 1/2 cups pimento cheese with jalapenos (M&C--Musten & Crutchfield Bold Pimento Cheese brand used)
- 2 tablespoons chives, minced

- Preheat the oven to 350 degrees F. Place a sheet of parchment paper on a large baking sheet with sides.
- Break up the pork and place it into a large bowl. Add the baking mix, pimento cheese, and chives.
- Use your hands to mix all the ingredients together. Use a 1-inch cookie scooper (sprayed with cooking spray) to scoop out the mix and place approximately (50) 1-inch balls on the baking sheet.
- Bake for 20 minutes or until golden brown and the internal temperature is 145 degrees F. Store leftovers in the refrigerator.
