Classic Chili

This is a classic chili recipe with ground beef, tomatoes, and kidney beans.

It cooks in about 20 minutes but can be simmered longer if you add extra stock or broth to it. You can also cook this meal in a slow cooker and I’ve included instructions in the recipe notes for that cooking method too.

This recipe has what seems like a long ingredient list, but most of the items are spices which help give this chili a complex flavor that I think you will enjoy.

Instructions
  1. Brown the beef and then add onions, peppers, and garlic and cook until onion wilts and any vegetable water cooks off.
  2. Add chili powder, cumin, hot sauce, cayenne, paprika, oregano, salt, pepper, and Worcestershire and stir.
  3. Add the tomatoes, tomato sauce, beans, and stock. Stir. Simmer for 20 minutes, stirring occasionally.
  4. Remove from the heat and add the cheese, saving a little to use as garnish. Stir until the cheese melts. Serve with tortilla chips and a spoonful of sour cream and cheddar cheese. Add additional salt and pepper to taste if desired.
Recipe Notes

Slow Cooker Option

  1. Brown the beef in a skillet (or in a slow cooker if it has the capability to saute) and then add the onions, peppers, and garlic and cook until the onion wilts and any vegetable water cooks off.
  2. Add the beef mixture to the slow cooker.
  3. Then add all of the rest of the ingredients except the cheese.
  4. Cook on low for 4-5 hours.
  5. Stir in the cheese in the hot chili after cooking is complete.
