These cookies are so easy to make that I wondered why I had not made them before! They have only three ingredients and cook in minutes.
Actually, the “cook” part is a little misleading because the cookies spend three minutes in the oven to melt the chocolate so that you can spread it over the cookies. You can melt the chocolate in a bowl in the microwave and then spread it on the graham crackers but I think the oven method is much easier.
You can buy crushed peppermint candy in a bag or you can make your own by crushing peppermint hard candy or candy canes. Just make sure that you crush the candy fine enough so that it is easy to chew.
I used dark chocolate chips for the chocolate topping but you can use white chocolate chips or milk chocolate. The choice is yours!
My tip for this recipe is to let the chocolate harden before storing these cookies so that they don’t stick together. Enjoy!

- 9 graham crackers, broken in half
- 9 tablespoons semi-sweet chocolate chips
- 9 teaspoons crushed peppermint hard candy

- Preheat oven to 250 degrees F.
- Break the graham crackers into squares and place them on a cookie sheet.
- Place 1/2 tablespoon of chocolate chips on each graham cracker.
- Bake for 3 minutes. Remove from the oven and use a spatula to spread the melted chocolate chips evenly over the cracker tops.
- Sprinkle each cracker with 1/2 teaspoon of crushed peppermint. Place cookies in the refrigerator for 10 minutes to cool and harden the chocolate. Store in an airtight container.
