Break the graham crackers into squares and place them on a cookie sheet.
Place 1/2 tablespoon of chocolate chips on each graham cracker.
Bake for 3 minutes. Remove from the oven and use a spatula to spread the melted chocolate chips evenly over the cracker tops.
Sprinkle each cracker with 1/2 teaspoon of crushed peppermint. Place cookies in the refrigerator for 10 minutes to cool and harden the chocolate. Store in an airtight container.

Substitutions
You can substitute regular graham crackers for chocolate ones.White or milk chocolate chips can be substituted for semi-sweet ones.
