This vintage recipe is modernized for busy schedules and a microwave oven! It is easy to make when you have limited time. However, it can also be made in a heavy saucepan on the stovetop using low to medium heat by melting the peanut butter chips and marshmallows with condensed milk. Then, remove it from the heat and add the remaining ingredients. Either method is quick and easy!

Substitute Butterscotch for Peanut Butter Chips

My mother got this recipe from a friend years ago. It was a new twist on chocolate fudge and was a big hit among nonchocolate eaters and fudge lovers. The original recipe used butterscotch instead of peanut butter chips, which gives the fudge a slight taste difference. However, you can use either flavor of chips in this recipe. If you make butterscotch fudge rather than peanut butter, use high-quality butterscotch chips for the best flavor.

Peanut Butter Fudge Steps

Add the ingredients to a large microwavable container. I like to use a glass measuring cup with a handle to make it easy to insert and remove from the microwave oven. Cook the ingredients for 30-second intervals, stirring between each interval. It will take about 3 minutes total time to fully melt the mixture.

Although it is tempting to heat the ingredients for three full minutes before stirring, this should be avoided. Prolonged heating can cause the mixture to overcook. Stirring well between intervals helps distribute heat and melt the peanut butter chips and marshmallows evenly.

Peanut Butter Fudge Storage

Keep the fudge in the refrigerator and cover it tightly to prevent it from drying out. It will keep its fresh flavor for about a week. You can also freeze it in an airtight container to make it ahead of when you want to serve it.

Ingredients
  

  • 10 ounces peanut butter chips
  • 1 ½ cups miniature marshmallows
  • 14 ounces sweetened condensed milk (1 can)
  • cup peanut butter
  • 2 teaspoons vanilla extract
  • 1 cup salted and roasted peanuts, chopped
  • butter

Instructions
 

  • Grease the baking dish with butter. Set aside.
  • Place the butterscotch chips, marshmallows, and milk in a large microwavable bowl. Heat on high for 30-second intervals for 3 minutes. Stir between each interval until melted.
  • Stir in the peanut butter and vanilla and mix well. Stir in the peanuts until they are well distributed. Pour the mixture into the prepared baking dish. Place a sheet of parchment paper over it and press with your hand or the back of a spoon to flatten it. When the fudge is smooth on top, cover it and place it into the refrigerator for at least 4 hours to chill. Cut into 60 squares.

Notes

Substitute Butterscotch Chips

You can substitute an equal amount of high-quality butterscotch chips for the peanut butter chips. This will vary the taste a little, but the fudge will still be delicious.

Alternative Preparation Method

This recipe can also be made in a heavy saucepan on the stovetop using low to medium heat. First, melt the peanut butter chips and marshmallows with condensed milk, stirring often. When completely melted, pick up the recipe at the beginning of Instruction 3 (adding peanut butter) to finish.
