This easy recipe for pineapple fried rice takes only a few minutes to assemble. For best results, use day-old rice. The recipe lists basmati rice, but jasmine rice will also work well. Serve with Coconut Chicken for a delicious meal.

Cilantro
This recipe will satisfy cilantro lovers because cilantro is cooked into the rice as well as stirred into it just before serving. For the best taste, use fresh cilantro instead of dried. Enjoy!

Ingredients
- 3 tablespoons butter
- 3/4 cup sweet onions, diced
- 1 teaspoon Asian chili-garlic sauce (Huy Fong used)
- 3 cups cooked basmati rice, 1 day old
- 1/2 cup red bell pepper, diced
- 2 teaspoons lime zest
- 1 cup fresh pineapple, diced into small pieces
- 1/2 cup + 3 tablespoons cilantro, rough chopped (loosely pack cilantro in measuring cup)
- Salt to taste

Instructions
- Melt butter in a skillet on medium-high heat. Add the onions and saute until they are wilted (about 2 to 3 minutes).
- Add the chili-garlic sauce and stir. Add the rice, red bell pepper, and lime zest. Stir to mix well.
- Add the pineapple and 3 tablespoons of cilantro. Stir. Cook for 5 minutes. Stir in the rest of the cilantro and season with salt. Serve immediately.
Recipe Notes
This recipe works best with day-old rice.
