Vegetarian Pineapple Fried Rice

This easy recipe for pineapple fried rice takes only a few minutes to assemble. For best results, use day-old rice. The recipe lists basmati rice, but jasmine rice will also work well. Serve with Coconut Chicken for a delicious meal.

  1. Melt butter in a skillet on medium-high heat. Add the onions and saute until they are wilted (about 2 to 3 minutes).
  2. Add the chili-garlic sauce and stir. Add the rice, red bell pepper, and lime zest. Stir to mix well.
  3. Add the pineapple and 3 tablespoons of cilantro. Stir. Cook for 5 minutes. Stir in the rest of the cilantro and season with salt. Serve immediately.
