It is hard to beat the original Rice Krispie Treats flavor! It is buttery, chewy, sweet perfection! But it is sometimes fun to add to the base flavor and create something new. Some new flavors I’ve tried are a hit, and some were definitely just okay. These double chocolate crispy treats were well received and are perfect for anyone who loves chocolate!
Use Cocoa Powder
Use a large pan to make these crispy treats because it makes it easier to stir the mixture after adding the cereal. These bars get their chocolate flavor from cocoa powder. You can use regular or Dutch cocoa–whichever you like to use in your recipes.
Make sure to whisk long enough to break up any lumps.
Add Marshmallows
Next, stir in the marshmallows. When they start melting, turn off the heat to prevent the mixture from becoming too hot, or the finished crispy treats might become too hard to eat. I always like to get the marshmallows to the melting point and then turn off the heat. When the butter is hot, it will continue melting the marshmallows even with the heat off. Stir until the mixture is smooth.
Add the Cereal
Add the cereal to the chocolate mixture and stir to coat it.
Use a Buttered Dish
Prepare an 11 x 14-inch dish by greasing it with butter. Add the cereal mixture and roughly spread it out with a spoon. Then use a sheet of parchment paper to press the sticky mixture and evenly distribute it in the pan. Press until it is an even height.
Add Chocolate Chips
Sprinkle mini chocolate chips onto the top of the cereal mixture and use the parchment paper to press the chocolate chips into it. Cut the crispy treats into square bars. Store leftovers in an airtight container. Enjoy!

- 1/2 cup salted butter
- 10 ounces miniature marshmallows
- 1/2 teaspoon vanilla
- 1/4 cup dark chocolate cocoa
- 5 cups Rice Krispies cereal (or other crispy cereal)
- 2 tablespoons mini chocolate chips
- Extra butter
- 9 x 13-inch pan
- waxed or parchment paper
Ingredients

- Use the extra butter to coat the bottom and sides of the 9 x 13-inch pan. Set aside.
- In a large pan, melt the butter on low. Add the cocoa powder and mix well. Add the marshmallows. Stir until the marshmallows are melting. Turn off the heat. Continue to stir until the marshmallows are completely melted. Add the vanilla and stir.
- Add the cereal and stir until it is coated with the chocolate mixture.
- Place the mixture into the buttered pan. Place a sheet of waxed or parchment paper on top and press the cereal mixture until it is evenly spread. Cut into squares or use a cookie cutter to cut shapes. If using a cookie cutter, reform any leftover mixture and repeat cutting shapes until all the cereal mixture is cut.
- Sprinkle the chocolate chips over the mixture and use the parchment paper to press them into it.
Troubleshooting
The most common complaint with any crispy treats is that they turn out too hard. This usually happens because the heat was too high when melting the marshmallows. Be sure to use low heat and remove the mixture from the heat before all the marshmallows are melted. Then stir until all the marshmallows are melted.
Substitution
You may substitute large marshmallows for miniature marshmallows.ย Use the same amount of ounces listed in the recipe. You can also cut them into two pieces to make them melt faster.
