- 2 pounds salmon fillets (4 fillets about 1 1/2 inches thick; approximately 8 ounces each or 227 g)
- salt
- black pepper
- 2 tablespoons Dijon mustard, coarse ground
- 2 tablespoons butter, melted
- 1 ½ tablespoons honey
- ¼ cup breadcrumbs
- ¼ cup pecans, finely chopped
- 1 tablespoon fresh parsley, chopped
Preheat the oven to 450 degrees F. Place a sheet of aluminum foil on a large baking pan. Add the fillets, leaving space between each of them.
Season the fillets with salt and pepper. Mix the Dijon, butter, and honey and brush on the fish.
Mix the breadcrumbs, pecans, and honey and sprinkle over the top of each fillet.
Bake, uncovered, for 10-15 minutes or until the fillets flake easily with a fork. If you have thin fillets, check them after 5-6 minutes. Be careful not to overbake.
