Easy Honey-Pecan Salmon

Ingredients
  

  • 2 pounds salmon fillets (4 fillets about 1 1/2 inches thick; approximately 8 ounces each or 227 g)
  • salt
  • black pepper
  • 2 tablespoons Dijon mustard, coarse ground
  • 2 tablespoons butter, melted
  • 1 ½ tablespoons honey
  • ¼ cup breadcrumbs
  • ¼ cup pecans, finely chopped
  • 1 tablespoon fresh parsley, chopped

Instructions
 

  • Preheat the oven to 450 degrees F. Place a sheet of aluminum foil on a large baking pan. Add the fillets, leaving space between each of them.
  • Season the fillets with salt and pepper. Mix the Dijon, butter, and honey and brush on the fish.
  • Mix the breadcrumbs, pecans, and honey and sprinkle over the top of each fillet.
  • Bake, uncovered, for 10-15 minutes or until the fillets flake easily with a fork. If you have thin fillets, check them after 5-6 minutes. Be careful not to overbake.
