Ingredients
  

Salad
  • 2 cups (about 6 ears) fresh corn, cooked & cooled
  • ½ cup tomato, chopped and seeds removed
  • ¼ cup green pepper, diced
  • ½ cup cucumber, chopped
  • ¼ cup purple onion, chopped
  • ¼ cup cilantro, minced
  • ¼ cup red bell pepper, diced
  • 1 medium jalapeno, minced
  • 5 slices cooked bacon, chopped (optional)
Dressing
  • ½ cup sour cream
  • 1 lime zested
  • ¼ cup lime juice
  • 1 tablespoon honey
  • ¼ cup olive oil

Instructions
 

  • Stir together all the vegetable ingredients in a medium-sized bowl.
  • In a small bowl, mix together all the dressing ingredients. Stir until well blended.
  • Add the dressing to the vegetables and stir. If using bacon, add it to the salad and stir it in. Serve chilled.

Best Flavor

This salad will keep in the refrigerator, but for the best taste, eat it right away.
