Equipment

  • (1) 15x10-inch jelly roll pan
  • parchment paper

Ingredients
  

  • 12 sheets chocolate graham crackers, broken in half to form a square (or use regular honey graham crackers or a mixture)
  • ¾ cup salted butter
  • ¾ cup sugar
  • 1 cup pecans, coarsely chopped
  • ½ teaspoon vanilla

Instructions
 

  • Preheat oven to 300°F. Place a sheet of parchment paper on a large cookie sheet with sides.
  • Break the graham crackers in half and arrange the squares with their edges touching so they are flat.
  • Melt butter in a saucepan over medium heat. Stir in the sugar and chopped pecans. Bring to a boil and cook for 4 minutes, stirring as it boils. Remove the syrup from the heat, stir in the vanilla, and spread evenly over the graham crackers.
  • Bake for 10 minutes or until golden brown. Remove from the oven and cool.

These cookies are best when eaten within a couple of days of baking.
