(1)10-ouncefrozen spinach, chopped(press spinach to remove excess water)
(1)16-ounce container sour cream
1cupmayonnaise
1packageKnorr® Vegetable recipe mix
Instructions
Place the spinach into a microwave-safe dish and add 2-3 tablespoons of water. Cover it and heat on high for 7 minutes or until the spinach reaches an internal temperature of 165°F.
Quickly cool the spinach by placing it in a wire strainer and submerging it in ice-cold water. Then, press/squeeze it to remove all the excess water.
Chop the spinach into small pieces, removing any large stems.
Combine all ingredients.
Then chill for approximately 2 hours.

To lighten the dip, substitute one 16-ounce container of nonfat plain Greek yogurt for the sour cream.
