Ingredients
  

  • 1 cup salted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs, lightly beaten
  • 1 cup peanut butter, crunchy or smooth
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 12-15 Reese's Cups, coarsely chopped (regular size not miniatures)

Instructions
 

  • Preheat the oven to 350 degrees F. Beat the butter and sugars with a mixer until creamy. Add the eggs and mix well. Then- add the peanut butter and vanilla and beat until well mixed.
  • Sift the flour and baking soda together and add to the peanut butter mixture. Mix until well blended. Stir in the chopped Reese's Cups until distributed throughout the dough. Do not overmix.
  • Use a medium-sized cookie scoop to place rounded dough scoops (about the size of walnuts) 3 inches apart on a cookie sheet lined with parchment paper. Flatten the cookies with a fork. Bake for 10-12 minutes or until set but not overly brown.
  • Remove from the oven and let the cookies cool for 3 to 4 minutes and then move them to a rack to cool.

Notes

Measuring the Dough

If you don't have a cookie scoop, take a walnut-sized amount of cookie dough and roll it into a ball. Then press a crisscross with a fork.

Chill the Dough

If the dough is difficult to handle when rolling by hand, chill it in the refrigerator for a few minutes until it is easy to roll into balls.
