Ingredients
  

  • ½ cup coconut milk from a carton (another milk can be substituted)
  • ½ cup fresh pink or yellow pineapple
  • 4-5 cups vanilla ice cream (heaping)
  • 4 tablespoons maraschino cherry juice (see notes below for frozen cherry substitution)
  • 1 tablespoon cream of coconut* (mixed well)
  • pineapple for garnish
  • maraschino cherries for garnish (or substitute fresh cherries)
  • 1-2 ounces Chambord liqueur (optional) (use for a boozy shake)

Instructions
 

  • Blend milk and pineapple together in a blender until smooth. Add ice cream, cherry juice, cream of coconut, and Chambord if using alcohol. Blend until creamy.
  • Garnish with pineapple and cherries.

Notes

Cream of Coconut Source

*This recipe uses Coco Real Cream of Coconut. It separates and should be stirred well to remix before adding it to a recipe.

Maraschino Cherry Substitutes

To make this shake without maraschino cherry juice, substitute 1/3 cup frozen pitted cherries. This usually turns the shake a purple-pink color instead of bright pink.  Other options for pink color include cranberry juice and pomegranate juice.
