½cupcoconut milk from a carton(another milk can be substituted)
½ cupfresh pink or yellow pineapple
4-5cupsvanilla ice cream (heaping)
4tablespoonsmaraschino cherry juice(see notes below for frozen cherry substitution)
1tablespooncream of coconut*(mixed well)
pineapple for garnish
maraschino cherries for garnish(or substitute fresh cherries)
1-2ouncesChambord liqueur (optional)(use for a boozy shake)
Instructions
Blend milk and pineapple together in a blender until smooth. Add ice cream, cherry juice, cream of coconut, and Chambord if using alcohol. Blend until creamy.
Garnish with pineapple and cherries.

Cream of Coconut Source
*This recipe uses Coco Real Cream of Coconut. It separates and should be stirred well to remix before adding it to a recipe.
Maraschino Cherry Substitutes
To make this shake without maraschino cherry juice, substitute 1/3 cup frozen pitted cherries. This usually turns the shake a purple-pink color instead of bright pink. Other options for pink color include cranberry juice and pomegranate juice.
