  • blender, an immersion blender, or a jar with a lid

Ingredients
  

  • ¼ cup olive oil
  • ¼ cup pineapple juice (fresh or canned)
  • 3 tablespoons red wine vinegar
  • 3 tablespoons pineapple ice cream topping (or pineapple preserves)
  • teaspoon salt
  • 1 pinch black pepper

Instructions
 

  • Place all ingredients in a blender. Alternatively, use an immersion blender or add all the ingredients to a jar with a lid.
  • Blend until all the ingredients are emulsified. Serve immediately. Alternatively, shake the ingredients vigorously in a tightly covered jar. Shake again each time before serving.
