Pickled Persian Cucumbers with Peanuts

Cucumbers marinated in sesame seed oil and rice wine vinegar with sesame seeds and chopped peanuts.

Ingredients
  

  • 4 small Persian cucumbers, sliced into circles
  • 2 tablespoons rice vinegar
  • 1 teaspoon kosher salt
  • 1 tablespoon toasted sesame seed oil
  • 3 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • ½ cup roasted chopped peanuts

Instructions
 

  • Add all the ingredients except the peanuts to a medium bowl. Toss to combine. Set aside for 30 minutes to 1 hour to let the flavors combine.
  • Garnish with chopped peanuts before serving. Store leftovers in the refrigerator.

Notes

How to Toast Sesame Seeds

Heat a dry skillet on medium until hot. Add the sesame seeds and cook, stirring occasionally, for 2-4 minutes or until the seeds are golden brown. Reduce the heat or remove the pan from the heat if it smokes or the sesame seeds appear to be browning too quickly.
