In a small saucepan, combine the sugar, butter, and corn syrup and bring to a boil over medium heat, stirring the entire time. Boil for 1 minute.
Remove the pan from the heat and stir in the cream, salt, and vanilla. Set aside.
Apples
Peel and thinly slice the apples and toss them with lemon juice.
Melt the butter in a nonstick skillet using medium heat. Add the apples, cinnamon, and salt. Saute for 3 or 4 minutes or until the apples soften. Add the cider and simmer until most of the cider evaporates. Add the caramel sauce and stir.
Filling
Combine the cream cheese, sugar, sour cream, and vanilla in a mixing bowl. Beat until smooth.
Spread the mixture into the bottom of a buttered 9 x 7 x 3-inch baking dish (or equivalent size). Top with the apple mixture.
Topping
Stir together the flour and brown sugar in a small bowl. Add the melted butter and stir to combine. Use your fingers to sprinkle small pieces on top of the apples. Bake for 25 minutes until hot and bubbly. Serve with apple slices, graham crackers, vanilla wafers, or other dippers.
