Ingredients

Brown Sugar Whipped Cream
  • 8 ounces cream cheese, softened
  • cup brown sugar
  • 1 pinch of salt
  • 1 teaspoon vanilla bean paste
  • 1 cup heavy cream
Fruit
  • 1 navel orange, peeled and sliced
  • 1 large green kiwi, peeled and sliced
  • ½ cup pomegranate arils
  • 1 small pineapple, peeled and cubed
  • 1 large unpeeled red apple, cut into cubes

Instructions

Brown Sugar Whipped Cream
  • Beat the cream cheese, sugar, salt, and vanilla bean paste for 2 minutes.
  • Add the heavy cream. Beat on medium speed for 2 minutes until thick and creamy.
Fruit
  • Use a knife to cut off the ends of the orange. Then stand the orange on one end. Cut off the peel, rotating the orange for each cut until the peel is removed. Then turn the orange on its side and slice it into thin round pieces.
  • Peel the kiwi and cut it into thin round slices.
  • Peel the pomegranate and remove the arils. Use 1/3 to 1/2 for the salad.
  • Peel and core the pineapple. Then cut it into small cubes.
  • Wash and dry a red apple. Leaving on the peel, slice it into cubes.
  • Add all the fruit to a medium-sized bowl, reserving some of the pomegranate arils for garnish. Gently stir the fruit to mix it. Then garnish with the leftover pomegranate. Serve in bowls with the brown sugar whipped cream on top. Keep any leftovers covered in the refrigerator.

Notes

Substitution

You can substitute an equal amount of vanilla extract for the vanilla bean paste.
