Equipment

Ingredients
  

Crust
  • ¾ cup rolled oats
  • ¼ cup unsweetened shredded coconut
  • 1 tablespoon coconut oil
  • 1 large egg, beaten
  • ½ teaspoon cinnamon
  • ½ teaspoon honey
Cheesecake
  • 1 cup low-fat cottage cheese
  • ½ cup plain low-fat Greek yogurt
  • 1 ½ teaspoons vanilla extract
  • 1 ½ tablespoons light coconut milk
  • 1 egg, beaten
  • 1 ½ tablespoons all-purpose flour

Instructions
 

Crust
  • Preheat oven to 350°F. Grease a mini-muffin pan with 20 tins.
  • Combine all the crust ingredients together using a food processor or mix by hand. Divide the crust between tins and tamp down.
  • Bake for 8-10 minutes or until golden. Cool.
Cheesecake
  • Process the cottage cheese in a food processor (or with a mixer) until smooth.
  • Add the remaining ingredients and mix until combined.
  • Spoon the mixture into the cooked crusts.
  • Bake for 25-30 minutes or until the cakes start to brown and pull away from the sides of the pan. Cool before serving.
  • Store in the refrigerator.
