Ingredients
  

  • 6 cups savory cornbread, crumbled (use your favorite recipe)
  • 3 cups buttermilk biscuits, crumbled (use your favorite recipe)
  • ½ teaspoons salt
  • ¼ teaspoon black pepper
  • 1 tablespoon rubbed or ground sage (you can use more or less for your taste)
  • 8 tablespoons butter (salted or unsalted)
  • 1 large onion, chopped
  • 3 large celery stalks, chopped
  • 2 large eggs, beaten
  • 3 cups turkey or chicken stock (plus extra if needed)

Instructions
 

  • Preheat the oven to 375°F. Spray the baking dish with cooking spray.
  • Mix the bread crumbs, salt, pepper, and sage in a large bowl. Set aside.
  • Melt the butter in a large skillet. Add the onions and celery and saute until wilted.
  • Add the vegetables to the dry ingredients and mix. Add the eggs and stock and stir just until moistened. The dressing should be loose and easy to stir. If not, add additional stock and stir.
  • Add the mixture to the prepared pan and bake uncovered for 35-45 minutes. If the dressing starts to over-brown, add a sheet of aluminum foil to the top during the last 15 minutes of baking.

Biscuit Recipe

Here is a biscuit recipe you can use for this dressing recipe.
  • 2 cups self-rising flour
  • 1/4 cup butter or shortening
  • 3/4 cup buttermilk
  • 2 tablespoons butter, melted
  1. Preheat oven to 475°F.
  2. Add the flour and butter to a large bowl and use a pastry cutter or two knives to cut the butter into small pieces the size of small green peas.
  3. Pour in the buttermilk and stir just until the flour is moistened. Be careful not to over-stir. 
  4. Drop large spoonfuls onto a baking sheet covered with parchment paper. 
  5. Bake for 8 -10 minutes, or until golden brown. Remove from oven.
