Ingredients
  

  • 1 cup coconut milk, unsweetened*
  • 1 cup blueberries, frozen
  • 1 tablespoon cream of coconut*
  • 2 tablespoons coconut or vanilla yogurt
  • fruit decorations, cut in shapes if desired
  • edible flowers, washed and dried

Instructions
 

  • Wash and dry any fruit and flowers used for decoration.
  • Cut fruit into chunks, slices, and interesting shapes. Use mini cookie cutters to cut shapes out of slices. Chop all leftover scraps into small pieces to use as filler or to sprinkle onto bowls.
  • Drizzle lemon juice on any fruit that will turn dark upon standing. Set decorating fruit aside.
  • Place coconut milk, frozen blueberries, cream of coconut, and yogurt in a blender and blend until smooth.
  • If the smoothie is too runny, add more frozen fruit to thicken or place it in the freezer for 10-15 minutes. You will need a stiff smoothie to hold up the fruit decorations.
  • Decorate the smoothie bowl with the fruits and other decorations you prepared.

Notes

Milk

Unsweetened Silk coconut milk was used in this recipe. Be sure to use drinking coconut milk from a carton.

Substitutions

Substitute whole or 2% cow’s milk or almond milk for the coconut milk.
You can substitute honey, maple syrup, or one-half of a very ripe frozen banana for the cream of coconut.
If you prefer a hot bowl to a frozen one, substitute oatmeal for the smoothie base, then decorate the top with blueberries and other fruits.

Decorating Your Smoothie Bowl

Smoothie bowls are most aesthetically pleasing when the fruit is arranged in a crescent moon or “I” shape down the middle of the bowl. However, be sure to let some of the base smoothie show through.
Smoothie bases can be placed in the freezer while you work on your decorations. This will keep it frozen until you are ready to use it. 
Cut kiwis into flowers by using a paring knife. Start in the middle and cut a zigzag around the kiwi, making sure each cut goes all the way through. Pull apart for two flowers.
