Ingredients
  

  • 15 ounces black beans, rinsed and drained
  • 1 cup red bell pepper, finely chopped
  • cup red onion, finely chopped
  • ½ cup fresh cilantro, chopped
  • cup frozen corn, thawed
  • 3 tablespoons fresh lime juice
  • 2 tablespoons balsamic vinegar
  • ½ teaspoon cumin, ground
  • ¼ teaspoon salt

Instructions
 

  • In a medium-sized bowl, add all the ingredients and stir. Refrigerate 2-3 hours so the flavors combine.
  • Serve with tortilla chips.

Notes

Balsamic Vinegar

To prevent the salsa from becoming overly sweet, avoid using heavily aged balsamic vinegar. Instead, opt for a more affordable, readily available balsamic vinegar from your grocery store.
