Apple Dumplings

Ingredients
  

  • 2 round pie crusts (refrigerated and ready-made)
  • 2 Granny Smith apples, cored, peeled, and sliced (cut each apple into at least 15 slices for 30 slices)
  • 1 cup brown sugar, packed
  • 1 ½ teaspoons cinnamon
  • a pinch of salt
  • ¾ cup butter, melted
  • 1 teaspoon vanilla extract
  • 8 ounces lemon-lime soda
  • cooking spray

Instructions
 

  • Preheat oven to 350°F. Spray the baking pan with cooking spray.
  • Cut the pie crust into 5 pie-shaped slices. Place 3 apple slices on each cut crust. Fold the crust over the apple slices, then seal the edges by pressing the dough together. Use a little water to wet the crust if necessary to seal the seams. Place the dumplings in the casserole dish. Repeat until all 10 dumplings are made.
  • Stir together the sugar, cinnamon, salt, melted butter, and vanilla flavoring until well mixed. Pour over the dumplings.
  • Pour the soda around the edges of the pan, being careful not to pour any directly onto the dumplings.
  • Bake for 30-35 minutes or until brown. If the dumplings start to over-brown before the cooking time is finished, place a sheet of aluminum foil over the baking dish for the remaining baking time.
