These Quesadillas are Loaded
These loaded chicken quesadillas include all the major food groups and a creamy jalapeno sauce as well. What makes them interesting is that they satisfy your appetite for crunch, gooey cheese, veggies, protein, and bacon — because everyone loves bacon on these quesadillas!
Shortcuts
First, these quesadillas use a rotisserie chicken that you can buy already prepared from the grocery store. You can also use bagged cheese, bagged pecan pieces, and chopped vegetables from the produce section. If you like to chop your own veggies, then you will enjoy putting this meal together. But if you want to make this meal quickly and save on the cost of precut items, then you might want to prepare everything the day before and store it in the refrigerator.
The sauce should be made ahead of time to let the flavors develop. But don’t worry, it tastes delicious if you eat it as soon as you blend it together! The sauce is easy to make in a food processor, but if you are in a pinch for time, you can always use your favorite bottled ranch dressing instead.
Leaving Out Ingredients
These quesadillas are delicious with all the ingredients listed, but I know that some people don’t love the taste of cilantro. Don’t worry, these quesadillas have enough ingredients that you can leave out anything you don’t like and still have a delicious quesadilla!
Have a Quesadilla Party
People get excited when they get to choose exactly what is in their food. So, make it a quesadilla party by preparing larger quantities of the ingredients and let your guests choose what they want on their quesadillas. You might even offer several types of cheese and sauteed onions and peppers in addition to the raw veggies. Have a cooking buddy help you heat them for each person. You can even do this outside with skillets on a hot grill because the tortillas brown easily and once they are hot, the cheese inside will melt. Just make sure you have enough bacon because it goes fast!

- 1 cup sour cream
- 1 cup mayonnaise
- 4 tablespoons dry ranch dressing mix (used Hidden Valley Original Ranch Salad Dressing & Seasoning Mix)
- 1/2 cup pickled jalapeno peppers (used Mezzetta tamed jalapeno peppers)
- 4 tablespoons salsa verde (used Herdez mild salsa verde)
- 1/2 cup fresh cilantro
- 4 8-inch flour tortillas
- 2 teaspoons olive oil
- 1 small rotisserie chicken, shredded
- 1/2 cup purple onion, minced
- 1/2 cup red bell pepper, chopped
- 1/2 cup tomato, chopped
- 4 slices cooked bacon, chopped
- 1/2 cup pecans, chopped
- 1/2 cup Mexican blend cheese, shredded
- 1/2 cup tortilla chips, broken
- 1/2 cup fresh cilantro, chopped
- 1/2 cup salsa

- Add all ingredients to a food processor and blend on high until finely chopped and the dip is smooth. Keep in the refrigerator until ready to use.
- In a large skillet, place 1/2 teaspoon of olive oil and stir to coat the pan.
- Add a tortilla to the pan. Spread out a handful of chicken on half of the tortilla. Then add the following on top of the chicken on half of the tortilla: onion, bell pepper, tomato, bacon, pecans, cheese, tortilla chips, and cilantro. Then drizzle 2-3 tablespoons of the Creamy Jalapeno Dip over the other ingredients.
- Fold over the tortilla and heat on medium-low heat until the quesadilla is lightly browned. Turn over the quesadilla and toast the other side. Top with salsa and serve immediately.
The Creamy Jalapeno Dip is best made a day ahead of time so that the flavors have time to meld.
You can substitute ranch salad dressing for the Creamy Jalapeno Dip.
