This might be one of the easiest salads you make that looks and tastes chef-inspired. It is actually inspired by a salad at Elizabeth on 37th Restaurant in Savannah, Georgia.

I use leaf lettuce as the green base, add watermelon, a basil vinaigrette, and feta cheese. The sweetness of the watermelon is a perfect match for feta cheese. Easy, quick, and delicious!

Salad Dressing Ingredients
- 1/3 cup white wine vinegar
- 1/3 cup olive oil
- 2 tablespoons sugar
- 1/4 teaspoon dried basil flakes
- Pinch black pepper
- 1/2 teaspoon salt
- Jar with tight fitting lid

- 1 head Green leaf lettuce
- 1 head red leaf lettuce
- 2 5-inch watermelon spears for each salad
- Feta cheese, crumbled
- Fresh basil sprigs for garnish (optional)

Salad Dressing Directions
- Place all salad dressing ingredients in a jar with a tight-fitting lid and shake. Shake again before serving. Store leftovers in the refrigerator.
Salad Instructions
- Wash and tear the lettuce. Break into smaller pieces and place on the salad plates. Place two watermelon spears on top of the lettuce. Place 2-3 tablespoons of just-shaken salad dressing on each salad. Sprinkle a little feta cheese on each salad. Garnish with fresh basil sprigs.
