Watermelon Basil Salad

This might be one of the easiest salads you make that looks and tastes chef-inspired. It is actually inspired by a salad at Elizabeth on 37th Restaurant in Savannah, Georgia.

I use leaf lettuce as the green base, add watermelon, a basil vinaigrette, and feta cheese. The sweetness of the watermelon is a perfect match for feta cheese. Easy, quick, and delicious!

Salad Dressing Directions
  1. Place all salad dressing ingredients in a jar with a tight-fitting lid and shake. Shake again before serving. Store leftovers in the refrigerator.
Salad Instructions
  1. Wash and tear the lettuce. Break into smaller pieces and place on the salad plates. Place two watermelon spears on top of the lettuce. Place 2-3 tablespoons of just-shaken salad dressing on each salad. Sprinkle a little feta cheese on each salad. Garnish with fresh basil sprigs.
