I always thought there should be pink pineapples, and I was overjoyed to find they exist! Instead of cutting into a pineapple and seeing the sunny yellow color, I always thought it could be pink. Having a snack bowl of yellow and pink pineapples would be so interesting! Now, it is possible with Pinkglow pineapples.


Where to Buy Pine Pineapples for a Pink Pineapple Shake
Pink pineapples are rare but can be found at some grocery stores and occasionally at Costco. You can also find them at smaller grocery stores and fruit stands that sell specialty foods. Additionally, they can be purchased online at Tropical Fruit Box (and other online sources). They are sold without a spiky crown because the grower keeps it to grow a new pineapple plant. These pineapples are pricier than yellow pineapples because they are rare. However, I purchased one at a fruit stand for $10. In time, as they become more plentiful, the price will go down.

Making a Pink Pineapple Shake
This shake can be made with or without pink pineapples because it gets its color from the cherry juice. However, if you prefer to omit the cherry flavor, try making the shake with pink pineapple instead of yellow for a pretty yet subtle natural pink color.

What Gives Pink Pineapples Their Color?
Pink pineapples have been genetically modified to contain more lycopene and beta-carotene than yellow pineapples. Lycopene is a red pigment in red foods such as watermelons, pomegranates, tomatoes, pink grapefruits, and red bell peppers. It is an antioxidant that improves heart health. Beta-carotene is found in foods such as carrots and sweet potatoes. It converts to vitamin A in the body and is essential for eye health and cognitive and memory function.

What Do Pink Pineapples Taste Like?
Pink pineapples taste just like yellow pineapples. Although modified for color, the taste did not change. Some people say they are sweeter, but I didn’t notice a difference when I tried it.

Create a Boozy Pink Pineapple Shake
For a spirited shake, add Chambord liqueur. The recipe lists an amount of Chambord; however, add more or less to suit your taste.

Pink Pineapple Shake
Equipment
- blender
Ingredients
- ½ cup coconut milk from a carton (another milk can be substituted)
- ½ cup fresh pink or yellow pineapple
- 4-5 cups vanilla ice cream (heaping)
- 4 tablespoons maraschino cherry juice (see notes below for frozen cherry substitution)
- 1 tablespoon cream of coconut* (mixed well)
- pineapple for garnish
- maraschino cherries for garnish (or substitute fresh cherries)
- 1-2 ounces Chambord liqueur (optional) (use for a boozy shake)
Instructions
- Blend milk and pineapple together in a blender until smooth. Add ice cream, cherry juice, cream of coconut, and Chambord if using alcohol. Blend until creamy.
- Garnish with pineapple and cherries.
