Sweet Cream Fruit Cups

Fruit cups with sweet cream are simple to make.  Just make a cookie crust. Place crust in the bottom of cups and freeze to set it. Place the cream overtop the crust. Then pour the gelatin over the cream cheese. Refrigerate until set.  Click here to jump to recipe.

  1. Make gelatin as directed on the box and set aside to cool. Then place in the refrigerator to chill.
Crust Instructions
  1. Crush graham crackers in a food processor or in a plastic bag with a rolling pin. Place crushed crackers in a bowl and add sugar. Melt butter and pour over crackers and mix well. Place in 8 small bowls for serving and pack down. Freeze for 10 to 15 minutes to set cookies.
Filling Instructions
  1. Meanwhile, beat the softened cream cheese until smooth. Add sugar and vanilla and mix well. Pour in the heavy cream and beat for 2 minutes until smooth and thick. Evenly divide and place cream on top of the set crust. Pour the chilled gelatin on top of the cream layer.* Garnish with fruit and a mint leaf. Chill before serving.
Recipe Notes

*The gelatin should be chilled but not firmly set.Β  Pour a little gelatin onto the cream cheese layer to make sure it isn't mixing with the cream cheese mixture.Β  It should sit on top of the cream cheese to form a red layer.Β  If it mixing, freeze the cups for 10 to 15 minutes after spreading the cream cheese.Β  Then add the cooled gelatin.
