Easy Recipe
Don’t let the thought of making homemade frosting intimidate you. If you have a mixer, you can have homemade key lime frosting in just a few minutes. There are no special requirements other than taking the butter out of the refrigerator to soften about an hour before you plan to use it. Softened butter is easy to whip up and will make your frosting fluffy.
Tangy Frosting
This Key Lime Buttercream is tangy and full of Key Lime flavor. It is delicious on a vanilla cake or cupcakes, so the lime flavor can take center stage. You can use either key lime juice or regular lime juice for this recipe, but either way, always use fresh juice for the best taste. This recipe makes enough frosting for an extra-thick 8- or 9-inch cake layer. Double the recipe to frost a cake with 2 or 3 layers.
Lime Zest
Grate a lime with a small hand-held grater to make lime zest. Be careful not to grate into the white lime pith because it has a bitter taste. The lime pith is the white spongy layer underneath the green exterior. To avoid it, use a light hand when grating the lime.

- 1/2 cup butter, softened
- 1 lime zested
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 16 ounces (about 3 1/2 cups) powdered sugar
- 3 tablespoons fresh Key lime or regular lime juice
- 1 to 2 tablespoons whole milk or cream
- sliced lime for garnish (optional)

- Beat the butter, 3/4 of the lime zest, vanilla, and salt until creamy.
- Gradually add powdered sugar, alternating with Key lime juice and milk until all the sugar and liquids are added. Beat until creamy and fluffy. Add additional milk if necessary to thin to desired consistency.
- Frost the cake and then garnish with lime slices. Sprinkle remaining lime zest over the top.
This recipe will frost one extra-thick 8 or 9-inch layer.
